Turnips, for example, need 10 days / 20+ light / 10+ water. I'm guessing that's the total, but how do I determine how much they need per stage?
No, that's the maximum amount needed for the ripe crops to stay on the soil. In the first page, scroll down and you could see the crop's per stage water and light requirement.

so this means i need to have the requirement lvl of sun and water to grow for EACH stage.

for example corn:

it needs min 5sun/3water and 2days to grow into stage1
then i need to water it again with min 4water/6sun is it?
then if it is correct, then when my crop grows into the next stage, all the requirement is reset (0sun/0water) is it?

if what i wrote is correct then... my corn dies away because i didnt water them in stage 1 T.T

Yup, if a crop reaches the next stage the sun and water points will reset to zero. So you have to reached the stage's minimum requirement again.

Remember that if the weather is cloudy or rainy, there is no sun point because there's no sun. So if you experienced cloudy or rainy weather, your plants might be lacking sun points.

Oh, sorry... I misunderstood you... No, the sun point will not reset...

Here's a quick example;

Day 1: Sunny , 3 sun point
Total Sun Point: 3

Day 2: cloudy, 0 sun point
Total Sun Point: 3

Day 3: Clear, 1 sun point
Total Sun Point: 4

So on...

Um... Hope this clear things up...

You got to be kidding me. And here I thought the hardest part of HM games was getting the girl.

Don't get me wrong, I love this kinda of detail in a game, as long as you have the time and means to do it all.
