Ok, this is going to be a long reply so bear with me for a bit.
First off, the DLC is only sold in a package deal for the 4 waves that have come out since the game was released. So you can't pick and choose which pieces you want; you have to get them all. But they are a little more complicated than what you stated.
Wave 1 just consisted of Officer Academy uniforms for the Byleths, which is neat, but not worth paying for unless you really disliked female Byleth's outfit. Which a lot of people did.
Wave 2 had a few more items with it: 5 new auxiliary battles were added, which are battles that you can do to grind for experience on weekends if you chose. New music was added to listen to during battles, which is neat. You got 4 stat boosting items; one for movement speed, one for base HP, one for strength, and one for speed. You got the leisure outfits for students that people joked made it look like they were part of a sports team, and you got glasses for Byleth. So a much better wave in my opinion.
Wave 3 gave you new sidequests that allowed you to do more. One unlocked the chance to recruit Anna, like you could in Awakening and Fates, as a playable unit. One unlocked a Sauna which you could use on the weekends, and you could do a quest that lets you interact with animals as well. New outfits were also unlocked like summer uniforms and fancy uniforms, as well as a Maid/Butler outfit that came with new battalions to use. Pretty neat.
Finally, Wave 4 gave you the Cindered Shadows sidequest, which is about 8-10 hours of playtime. It's a side route that can unlock 4 new characters, as well as some new classes that your characters can use and gives a bunch of information about the world. This gives you access to new paralogues and support conversations with these new characters, though I wouldn't recommend doing this side route until you've beaten the game normally at least once. Lots of spoilers in there and the sidequest is considered to be very difficult. This is probably considered the meat of the DLC and pretty interesting to play.
Personally, I do have the DLC and I found it to be worth it as I really enjoy Three Houses and like having more reasons to continue playing. But I can understand if it's something that you wouldn't enjoy or find too expensive to get. But there is a lot there for $25.
Now as for the easiest route, there really isn't one. Crimson Flower (the Edelgard Route) is the shortest of the 4 routes available, but if you don't want to choose Edelgard, then I wouldn't recommend playing it. Basically, it all really comes down to what Lord and house you want to play with as each house can be used effectively. And with recruiting being an option, the Lord is basically the main focus. If you really want an easier time, you can choose Casual difficulty so there's no permadeath, but that's up to you.
