Empty Can: Anywhere
Legendary Scale: Anywhere, rare
Rare Can: Anywhere, rare
Round Stone: Yokmir Forest Waterfall
Rockfish*: Sandy area in Sercerezo Hill, rare
Sand Flounder: Found in sandy area on far east of Sercerezo Hill

You forgot rainbow trout, only can be found when spring, and summer (selphia area, and river outside selphia gate)

Yellowtail can be fished in the Winter spring too.
Tuna is available in the Winter spring and Silver Lake, also rare.

I don't think Taimen is on your list.. it can be found in the spring area as a huge shadow (rare)
Rainbow Trout is also caught in Keeno Lake (or whatever the summer lake is called)

I've been wanting a fished items list. Thanks a bunch. I've fished only a little in game but I'l try to help.
Salmon can be found in Keeno Lake.
Shrimp can be caught in Keeno Lake.
Crucian Carp- Keeno Lake
Girella- Keeno Lake
Squid can be found in Selphia.
You did not mention Pike, Chub, Snapper, or Turbot.
Pike- Selphia, fall for sure but I believe it appears in other seasons.
Turbot- Selphia, fall
Chub- Selphia, fall
Snapper- Selphia, fall
Hopefully this helps to fill in some of the blanks.

This is going to be extremely helpful, thank you so much for taking the time to make it! I especially can't wait to find out where on earth to catch Lamp Squid. Also I find the easiest spot to catch Rainbow Trout personally is in the Idra Cave. I just run in and out of the first room with the pond until I see the very big fish shadow which usually tells me its a Rainbow Trout. I do this at Selphia Dragon Lake as well but like your guide is showing I'm guessing they aren't available in the Fall and Winter there. So to get them year long I love being able to go to the Idra Cave, it makes Leon happy

Because the guide is still just getting started, I may end up changing the layout at some point. I feel like the way I have it now is a little disorganized.
My current ideas are:
-By location (Each category will be a fishing location, with the fish you can catch [with info] listed below.)
-By fish (Each fish will get its own entry, with locations, seasons, rarity listed.)
-By season (Each season will have the full fish list, but will only have the locations that the fish can be caught during that season.)
If you have any requests of how you might like it to be organized, feel free to tell me.
31/32 Fish, missing one if anyone knows what it is.
Also, I think by location would be the easiest way to read the guide!
EDIT: Glitter Snapper was the missing fish, thanks fourside!

Thanks for the list! I will definitely think about organizing it by location. In order to do that, I will have to take a quick look through the game to find all the fishing areas.

All your format ideas sound organized and good for me.
All I'd suggest is to list the fish in alphabetical order too. For example if you keep the seasons layout, list the fish under in alphabetical order. This way if someone is looking for a certain fish they can search the names quicker then if there is no order.
Also I have a question pertaining to fishes. How does one know if the fish is rare or not?

The Japanese Rune Factory wiki list which fish are rare, sadly I can't read Japanese well and can't tell what it actually says if someone else could translate. Also I am still missing one fish which I believe is one of the rare fish.

Is the fish you were missing Glitter Snapper? I was doing some fishing to collect info for the guide and I caught one. It wasn't on the list you gave.

Ah I made a mistake ;-; when I said Spring Area, (For Taimen) I meant Spring Spring. I forgot there was a spring area other than that, my apologies.
Also Throbby Snapper can be fished from Keeno Lake
