At 6th generation.
After looking into my animal's a little, I think Livestock produce 10 star produce at 6th gen...
And the coop animals produce 10 star produce at 7th gen. (prolly cuz it's shorter breeding time)
Isn't that for the end-of-April DLC stuff? (The candidate animal costumes and the mystery event with Cindy and Mikey.) Maybe something has to be prepped for that, even if you don't buy the DLC yourself.
Did the update (version) number change? If it did, you can look up the version number to see exactly what it is. As for the DLC stuff itself, it shouldn't become available to actually play until the 29th.
I wish there was a way to check what the updates are from games in general. Every time I turn on my switch, I see an update from "-----" game, but there's no way to know what the update it.

The different color cloths come from different types of grass. You'll need a textile maker and thread makers. (Unless you mean wool fabric? It's pretty much the same but with yarn and cloth makers)

Not in general.
My normal cow, brown cow and buffalo do it since generation 6. My goats (both types) in generation 8. My chickens have started it in generation 7. But my black cows are already in generation 10 and still don't produce 10* milk (generation 11 is already born but not adult yet, so maybe this generation will do it. I will update my post if this the case.)
