And yes, some games do not help their graphic section although they offer interesting ideas, the sad reality.
Years ago I tried to create a game, it requires an immense effort (in many aspects) and even using engines that theoretically do everything, since then I have respected those who make them even though their graphics are not the best or are standard.
The difference of having someone with graphic talent in the team or that you have it yourself, or have money! I have neither of them lol

Check out Windy Kingdom! It's farming, survival and defense game rolled into one. Edit - So I'm watching the video I linked and this game looks cute, gory, and possibly pornographic. Ok, I'm, exaggerating the latter. But you play as a man transported into a kingdom with only women cause all their men have been infected with a disease or something. This is hilarious.

This might sound like a strange question, but which of these games have the most detailed\extended fishing activity? I don't want a fishing-only sim, they're too boring and serious\complicated for me, but I really like fishing in games like HM, SoS, etc. So much that in Stardew Valley I kind of 'cheated' by fishing so much that I became rich way too fast...  Oh and another question: are there any games like HM and SoS that aren't centered around gardening? For example, I absolutely LOVE the Graveyard Keeper! It feels exactly like HM (minus marriage), but is also vastly different, b\c you're dealing with keeping a graveyard instead. It's like HM with a unique twist to it, and I wonder if someone else has made a game like that, with exactly the same feel and mechanics as HM\SoS, but not about gardening.

Trying looking into the Legend of the River King series. It's from the makers of Harvest Moon. That's a fishing RPG. Not sure if that's what you want.

For the fishing I'd suggest My Time At Portia or Re:Legend. Both games give unique looks to the fish and have various things to do with them after catching. In MTAP they can be used as gifts, some can be cooked, some can be dried, and you can also breed them. Re: Legend is the same on them all being unique models, but you can also create a fish farm to store your catches and there is a fish racing festival in the game as as well. But if you're more in for a fishing RPG, the River King series might be what you're looking for.
For the non-gardening-centric titles i'd suggest Slime Rancher or My Time at Portia (again). Slime Rancher's farming is unique as you're providing for your slimes in and adventuring around looking for more or exploring for fun. With My Time at Portia, you manage an old workshop where gardening is one of the things you can do. It plays a lot like a HM game in the town interactions (events, dating, marriage) but there's dungeons and combat too, so keep that in mind.
