Ive been having trouble with Fruit trees for a bit now. I'm having trouble getting them to produce perfect S rank Fruits. The two trees are both Peach and Orange trees and I don't think the sun is the issue. I noticed overwatering crops damages the overall grade, so I think it could be because they get too much water in between the Seed and Sprout 1 stage. Is this correct? I'm starting to log the progress of them, so any advice would be helpful!

Trees are finicky things if I remember from eons ago, especially since you can't control the natural sun points and rain when grown outside, and you can't grow them in the greenhouse like in Island of Happiness.
My notes say the water/sun points impact the plant while its maturing from a seedlings, and once it's full grown (in a non-fruiting season) no more sun/water points are relevant towards its maturity. They become important again after the tree flowers and begins to produce fruit. The tree will stop producing fruit if its sun/water point exceed the maximum limits. Your best bet is to start with a new tree and keep track of the rain they receive and how many water points earned. Then water when you feel that growth stage hasn't earned enough water points yet.
But yes, the minimum amount of water/sun is how you achieve higher-raking crops.
