Star symbol: about halfway filled

11th of Spring, first year.
5 harvestable turnips but none are returning a single star upon picking them even when save scumming, unlike before.
What exactly do the two symbols mean? I thought the star one meant if at least partially filled meant I have a chance of at least randomly acquiring a crop item with a chance of it having a star?
The symbol next to the star symbol was a representation of the soil quality for the field plot that crop item was just gathered from and if it was empty, that meant the soil was currently in a neutral state?
I would have thought I could still randomly pick a turnip with a chance of it having a single star but no matter how many times I try doing so by reloading my save, it never acquires a star crop for any of the 5 turnips.

The star indicates the plant's chance of producing a star ranked product. The more full the star icon is, the greater the chance of getting a 3-star crop at harvest when grown in a healthy field.
The weird bubbly X icon is the plant's chances of mutating. Since Turnip doesn't mutate into anything during Spring, that box would typically be empty. You can influence this by using seasonal fertilizer to impact that health value, such as adding Summer Fertilizer to trigger a Heart of the Earth mutation even though it is spring season.
As I see it, star rank is determined by field health and the filled-in star. When using the field you have already harvested in recently, this reduces the chance of getting at least a 1-star crop when the star is somewhat filled.
