The Harvest « Harvest Goddess » is pretty difficult if you count the wait to get him, and the climbing to reach him.

I'm not sure how many seasons it'd take, but Selena is also easy.

Go to her island and forage coconuts, bananas, or ANYTHING from her island... Or for 'free' loved items: Black pearls.

Black pearls are on the floors: 25, 44, and 49 in the water mines. They glitter and are always there (three every day)

Jin could be pretty easy too, since I heard he likes herbs and herb tea a lot. You can make herb tea for free if you have a pot. And herbs are just laying on the ground.

Anissa and Jin are the two people to woo, they really suite each other. =P
