1. How do you get the other islands? Is there a certain amount of sunstones needed?
2. How would you unlock the other seeds? (( strawberries, onions, ect. ))
3. How would you get mining recipies now? Would you have to unlock floor 255 to get them?

For unlocking new seeds I take it you would have to farm enough of the other crops for that season, similar to how Island of Happiness unlocked them.
As for recipes like rice and natto if it is still anything like Island of Happiness, you will get one for every other time you reach floor 255.
I'm unsure about "unlocking" floor 255 of the mine, but descending to reach it will take anywhere from thirty minutes to an hour give or take if you plan on mining while you are down there. That is just my pace though, it also depends on what food you bring to eat while falling.
For Mark or Chelsea to arrive I believe you still have to get all the other main villagers and the hotel first.

1. Yes, there are certain amounts of sunstone needed for each island
You can go unlock it by asking the red sprite, whose name i forgot, at the Plaza Island
Small Island: 3
Rice Island: 5
Volcano Island: 8
Animal, Fruit, Sun Island: 10
Mushroom, Goddess Island: 12
Sunny Island: 100
But You can unlock Lighthouse and colobocle island by simply accessing it via boat (for Lighthouse) or cross over the lily pad at the west side of your farm (colobocle)
2. By raising your crops points, raising island or shipping certain number of crops
Cucumber+Onion+Yam: Crops lvl 5
Strawberry+Pumpkin+Spinach: Crops lvl 7
Cabbage: 100 wheat
Pineapple: 100 soybeans
Green Pepper: 100 Buckwheat
Peach, Banana, Orange, Apple, Grape: Fruit Island
Rice: Rice Island
Buckwheat:Ship 100 for each Fall crops (except Pepper)
Soy Bean:Ship 100 for each Summer crops (except Pineapple

3. I cant be sure, but it seems that there's no mining recipe here, since i havent got any

well it's simple, i know some ways not all but some
1- harvest 100 spring crops (no 100 turnips, 100 potatos bla bla bla, like 60 turnips 40 potatos)
2- harvest 100 summer crops (the same for spring crops)
3- harvest 100 fall crops (the same from crops above)
4- give townspeople 5 gifts and you get the stone (not sure if is 5 or more, but i think its five)
5- befriend townspeople up to 2 hearts, like befriend everyone that lives at someone house to 2 hearts then enter and you get a sun stone, the same for whose live alone
6- befriend your animals (dog, horse, pig, cat) to 2 hearts and you receive a sun stone for each of then
7- look at the bush in the middle of chen shop and mirabelle shop
8- look at the wells of the town 1 and town 2 i'm not sure where are those, search everywhere!
