I always saw that she turned into a hman mostly to be with Eric cause her being a mermaid all the time would be awkward. See Leia and her duck pond.

Actually, in many mermaid drawings I've seen, the fish part starts right after the lower genitals are completely formed. However, most people usually go with the Ariel-like version to make it appropriate for the kiddies.
