Ushi No Tane Forum

I'm in my 2nd Winter, fishing in the stream on my farm with the Mythic Pole and I can't catch the friggin Huchen. I have the recipes for Sushi, Sashimi and Grilled fish in my book, but I learned them by just making them instead of learning them from the townspeople. Do you have to have learned it from townspeople to catch the Huchen? If so, who gives these recipes?
