The jersey cows give you only a Large milk. The normal cows will produce only a small milk, even if they have 10 hearts.

You need to get both if you want to cook some meals.
Some food can be cooked only if you use a small or large milk/butter. The same situation is with eggs. The black chicks lay the smaller and black eggs. If you wanna cook ice creams, you have to use the black eggs only. You cannot use the white eggs. BUT if you want to cook a cake, you need normal eggs. Not black eggs.

Add the fact that in IoH/SI you can burn salads, cook without cooking stuffs, and you only need a milk and an egg to make ice cream, and you'll be thinking 'Why the heck does Pierre need all those knives and stuff?'.

Oh yes, I forgot about them. Ehem...
If your cow or chicken wins the festival, they will be able to give you the golden milk/eggs BUT.... they will NOT produce them every day. The day will be random. Sometimes you will get the golden stuff from them, and sometimes not. I'm not sure about the giant wool because my sheep hasn't won any festival :/
