There's a company called USI in Japan, but I can't tell what they do. Maybe it's something to do with that?

It's very likely. Tho' MMV is located in Shinjuku and USI is in Yokohama, that doesn't really mean anything because the Internet exists and I only mentioned that to show off that I know how to use Google. ^^;

If USI is a computer company, maybe they do some of the coding for the games?

I'll take a stab at a guess [no researching required other than to ponder based on Vaughn's profession.] Maybe it's "Universal Suppliers Incorporated" You know like maybe where he gets his supply of animals to sell to Mirabelle and that's where he is Wednesday - Sunday. Hey, it could happen!

i've read somewhere that it was intended to be 'ushi' (like ushi in ushi no tane, which means cow), but since it doesn't fit to the cap's space, they shortened it to usi.
this is harvest moon, so don't expect it refers to advanced technology-related things or professional organizations

I always assumed it was some sort of abbreviation for ushi. since he is a cowboy and all and messes with animals.

It's Ushi. usi is another way to romanize ushi.

Just like how Gray's "uma" hat... is uma. Because he likes horses.
