I'd like to start off by letting you know that all quests are optional, so don't stress about "getting through all" of them.
Also I am kind of assuming you don't read Japanese, so I'm sorry if you can read it and all this seems obvious to you.
Basically you click on the quest on your quest list, and press Y to flip through the screens. The first screen is a description of the quest, essentially why the item is wanted (not helpful information really). The second screen is what you need to collect and who you need to give it to. The third is what you will get in return. The top right corner will show your remaining time to complete the quest.
As I said, all quests are optional; important requests will reappear eventually if you can't complete them in time. Yellow quests are the normal ones; they're generally random items and random rewards. Orange are asking you to do some kind of chore, generally (always?) with a time limit of within the same day. Blue, purple, and pink are the important ones; they are the ones that get you helpful items or farm upgrades, etc. I thiiiiink the pink ones are ones where you have to go speak to the relevant person to choose the upgrade you want for that month, and then you get a new quest for that upgrade.
