Is there any way to throw a stack of items on the floor?
For example I'm holding a few branches (same amount of stars), do I have to throw them one by one or is there a way to throw all of them?

You can choose to "drop" a stack of items from your rucksack menu. That will drop the entire stack on the ground so you can do what you want with it.
