If you have a shrine cart(or any other cart), when you buy another cart, does the shrinen cart go away or can you change it?

You can change back and forth between all of your carts in your house, there should be a cart, radio(when you get it) and a calender inside of your house on the left. The cart will allow you to change which cart you are using

All your carts will basically stay in an inventory. And inside your house, you can switch to whichever one you want. The only draw back is that some carts have more space than other carts and won't be able to switch from a cart that has 6 pages of items to one that only has 4 pages available.
