In terms of regular fighters, Darkstalkers. Has lots of interesting characters, and have just loved it since I was younger. They need to make a new one....*sigh* I'm also somewhat partial to Street Fighter, but only really the Alpha series.
In terms of action-fighting-adventure-esque....Zelda, I guess. :T I'm not a huge fan of the action-adventure genre, or rather I should say I don't play many games in that genre (but have nothing against the genre per se.)
I'll doubt anyone would remember a game called Soul Blade back in the PSX days. That used to be one of my favorite fighting games. This is before Soul Caliber was released in PS2 and from that point onwards its series. So I like those games.
Doubt anyone would of played Guilty Gear X series either. That's also one of my favorite. Hard to play on Manic Mode but if you can manage it on all characters, you probably have one of the fastest reaction times unless you abuse some loop. The same company that worked on Blaze series I believe.
Adventure would come down to Ys Series, starting to doubt anyone played that too...
Fable for the western release games since it was quite a relaxing RPG game. To be honest, I just upgraded only the shield, healing, time and push. Then rest of the points went into improvements on weapons and the according skills.
I'm currently playing Persona 4 for the PS2 and I have to say i can not stop playing it. Although it's an RPG it has a great story line and so far is probably my favorite PS2 game. (I'd say I'm maybe half way through the game?). But my all time favorite game is The World Ends with You for the DS. Go to the store and buy it now. I beat the story line in about a week because i couldn't stop playing. I've beaten the game maybe 16 times by now and i still love it! And those are the games I'm going to recommend at the moment Hope you like them just as much as me~
I'm not really into fighting games, but I've still spent lots of time with Super Smash Brothers and Tekken. And of course the MvC series, and Jump Ultimate Stars. I have a soft spot for Guilty Gear and Blazblue but I never could get good at them. XD
