If you touch the sheep as often as you can when the shears appear above the animal's head you will get a higher quality product. This will give you more money for the wool or yarn if the animal is not yet at 10 hearts.
The milking game is similar, a higher quality of milk is given for successfully playing the milking game. There is a small, medium, and large button. You want to fill the milk jug by hitting the button when the arrow is above one one of these categories. The fuller the milk jug at the end of the game the higher the quality of milk will be obtained. If you want to just press the button when the arrow is above large it will take less time, but you can be successful by pressing the button when the arrow is above any size.

One benefit I forgot to mention is that this is a way of shipping an S rank product of milk or wool so you can unlock the jersey cow and suffolk sheep. Early in the game your animals will not have enough hearts to produce the necessary S rank.
So try to master getting all the wool off that sheep and filling that milk jug!
