Maybe you can find some tips here.
As for me, I tried to grow a tree once (when I hadn't discovered Cher's guide yet), but it died, so I haven't tried to grow a tree since ^_^"

Make sure every tree you plant has a gold lumber fence around it. You can get the lumber from the monkeys or as gifts, but it will help you if you are experiencing a random 1% death for no reason.
Most of the time it is the amount of water the tree receives. Some trees can take heavy water and some, like the Banana tree, need almost drought conditions.
Fruit trees are the trickiest crop in this game. You will not get many (or any) grapes from a tree in the Fall if you don't load the tree with massive amounts of water.
The first tree I was successful with was the Apple tree. I double watered it every day and with a gold lumber fence, I had quite a few apples from it.
Keep a chart on sun points and water points. There is nothing you can do about the sun points but if you see rain in the forecast you can decide not to water the tree.
One water recommendation in the forum was to give the tree the minimum number of water points for a stage and leave the tree alone until it reached the next stage.
For example: the Peach tree needs 4 water points minimum to go from seed stage to the first sprout stage. Give the seeds 4 water points that first day and no water on the other days until the tree sprouts. If may receive enough sunpoints in 8 days but if you have rain it may take more days. If you water the minimum you won't go over the maximum and (in the stage in my example) have the seeds disappear.
You can find a lot of threads in this forum that might provide some help if your trees continue to die. I finally grew and harvested fruit from 16 trees after I mastered the water points.
