to get their sunstones do i have to give them 40 items to cook or learn 40 recipes from them?

Just keep learning recipes from them, giving them a thing everyday, though.
Then they'll give you the sunstone when you have learned enough recipes.

Receive from Haila for learning 30 or more cooking recipes from the cafe
Receive from Nick for learning 40 or more cooking recipes from the diner

so if i give them a food item and it does NOT turn into a recipe it doesnt count right?

It only counts when it turns into a recipe.
Give them eggs and milk everyday that'll work.
I spent a month and a half only giving milk and eggs and it was succesfull.

If you want to learn recipes from Nick and Haila, it goes without saying that you should save right before you try to give them something. You can often reload after a failed attempt and get a success the next time. Many of the things you can give them for recipes are simply too valuable or hard to get to waste in failed attempts.

Oh, in case you didn't know, you can only learn one recipe a day from both of them, so it will take at least a full season of learning recipes to earn those sunstones, and that's if you give them something for a recipe every day!

My Sunshine Islands days were very short, so I got their sunstones really quickly.
