No, it doesn't matter what you put in the fertilizer bin, but colored grasses and medicinal herbs are easier to obtain. And withered grass is also used in pharmacy to create formulas and all that, so it's a waste. Unless you are lucky with Arthur's shop, or love resetting
You can have five fields total, and I believe five extra rooms. (I never needed more than two rooms, so I wouldn't spend money on castle expansions unless you like to decorate or it's one of the last few things you need for 100% completion.) Fields don't get any larger than they are when you first acquire them, but five of that size is more than enough field to work with. Especially because you can also more or less warp to the seasonal fields once you're far enough, so it isn't much of a chore to get to them.
None of them are "special"... I mean some are guardians but really there is nothing different when it comes to courting any of them

Can I get multiple seasonal headdresses from the pond fairies, or is it just one? I would assume more than one since to get 100% shipping completion the headdresses and the Four Seasons hat all need to be shipped, but you never know... or will Arthur stock them after I ship them?

You can get multiples, but only one a day. Arthur won't stock them, but I have seen them show up as request rewards.

Like Peachy said there are grape trees and shining trees (you can get a lot of lumber and sometimes minerals from shining trees). You can get random seeds from here
