more to the mountain?

Are parts of the mountain off limits? Does Eileen break up giant boulders on the mountain? What kinda request would that be, I feel like I've never seen them

After you complete sections of the tunnel, there are events where bears break some of the boulders.

Exactly. The first few of these will come quickly, but from what I think was another post of yours, you're waiting to fix the tunnel and hoping to get married first? So that's why they haven't been broken. The final boulder will be broken after tunnel expansion 4, which is technically post-game, so it'll take much longer to get.
Also, in the winter, the frozen river in Konohana high allows access to an area you can't normally reach when during the other seasons. Ore stone can randomly appear in this area, even if it's sunny!
