You need to grow roses on all available crop spaces on your Bluebell farm.

I'd like to know if this means literally all avaible spots, so I can't use any fertilizer or just grown like ten and nothing else on the Bluebell Farm? Every single spot needs to be Pink/Red/White Roses depending on season?

I tried to get rose honey for some months, but I wasn't lucky.
I planted only roses, no fertilizer.
But I am not sure if you need to plant on all spots.

Now I have already planted a tree to get fruit honey at least...
So I cannot try it out again...

Maybe there is a lucky one, who can tell us how he got the rose honey

I'm not sure about fertilizer, but as it's not a flower or crop, I don't see why it would interfere. But as Cowhunter mentioned, it's impossible to get rose honey once a tree has been planted, so watch out for that. The different colors are because of the color rose that can be planted that season (i.e. red roses will grow in summer, but nothing will happen in the spring, and once fall comes along they wilt.)
