I'm looking at my farm and the small area fenced off for crops and thinking about adding more plots around, but I realize that there are a lot of out houses I'll be making eventually. How much room do the out houses need? I wanted to start a few fruit trees near the house also but I'd hate to have to cut them down to make room for out houses later. Is the area they take up larger than the 3x3 area crop plots take?

If you witness all of Eda's Rivalry Events she will give you her farm when she dies. I think it is Winter 1st, but I haven't got that far into the game yet.

Doesn't matter. You still get the farmland regardless when she passes away.
