Questions on growing lumber

I have a bunch of hardwood and softwood trees growing on my farm. I planted them about 17 days ago. The seedling says they take 16-20 days to grow. So here's what I'd like to know:
1. After 16 days, the trees went from tiny sapling to looking like mature trees. I chopped one down experimentally and got 12 small lumber out of it. If I wait until 20 days have passed, will the trees reach full maturity and provide more lumber? Or are they already done and it's ax time now?
2. Because you can't double water the lumber trees, why do they have a 16-20 day growth period? Do they grow in 20 days on your farm and 16 in the orchard rivalry field?
