Single-growth plants (onions, spinach) will not mutate after growth.
REPEATING-growth plants (strawberries, peppers) CAN mutate after growth, assuming the correct variables have occurred (elevation, fertilizer if needed, soil condition).
So, that onion will never turn into a scallion, but your strawberries that failed to mutate might turn into white berries the next time they are ready for harvest, assuming you planted them in the correct conditions. And each time that repeating-growth plant matures, it has a chance to mutate. I had a patch of strawberries that I left running for several season (before unlocking the rest of the seasons) where of 30 or so plants I eventually had only 3 non mutated plants left!
