My cow has not long got the Calm skill. How do I get the other 3? She is currently on 4 full hearts 0% stress and I brush, feed and pet her every day.
Also, is there a skill that allows bonus milk/wool?

I don't think we know much about animal skills and what they do yet. No one has really delved into it. I think there IS a feed that helps your animals produce more, but it's pretty high level (very pricey or requiring a lot of special crops to produce).
It seems like there is a lot to animal breeding in the game, but getting the stuff for the potions is kind of ridiculous. I will probably start working on it once I get all the rest of the seeds unlocked in my main game (4 known and 3 unknown left to go!).

Some skills are learned with time by brushing and petting your animals, they're mostly just boring things. Like tolerance to stress and stuff.
The interesting abilities, like more produce and stuff are learned with special feeds. Feed the animal daily and they'll learn the skill in a number of days.
You first need to unlock the feeds by doing requests for several characters like Hunter and Naomi though. After you unlock them, you can create them yourself with a windmill, but most are also sold by Sam.
Another way to learn new skills is by using miracle potions that give skills to newborn animals, but they're mostly really hard to make. The recipes for the potions are given to you by doing requests for the witch and wizard.
Apparently newborn animals also have a chance of inheriting skills from their mothers.

I have been able to use the Active Potion on a sheep to produce an offspring. The sheep took 5 days to give birth. The mother had Michievous (lvl 4), Spring (lvl 1), and Strong-Willed (lvl 3), and the baby had Mischievous (lvl 2), Spring (lvl 1), and Strong-Willed (lvl 2).
The baby didn't learn the Active skill from the potion, but I am guessing that if momma didn't have three skills, then the baby might have learned Active.
With the seasonal feed, the animal will learn two seasons if you keep feeding it. Like if you feed the livestock animal Winter Feed to level up the Winter Skill, eventually you'll learn the Fall Skill too.
Chickens only have one skill slot, and the hatched chick doesn't learn any skills, probably because you can't tell which egg came from which chicken.
