I need to talk to a villager for 5 days everytime I need...

Or do I just need to talk to them for five days, I can then gift them daily?

You just need to talk to them for five days, then you can gift them daily.

If you ignore them for several days in a row, however, you'll have to talk to them for a couple days before they'll accept your gifts again.

If you've forgotten how long it's been since you've started speaking with them, it's a good idea to save the game before trying to give them the gift.
That way, if they don't accept it, you can just reload the game and continue on without the frustration of a gifting reset (having to wait even longer before being able to give them gifts).
