I love them both!
Amir is a little better in Grand Bazaar, in m opinion, though. He's more princely and nice. In ANB he comes across as a little more pretentious, but he's still rather nice and super cute.
Sanjay is a sweetheart. He's very well spoken and talks about Amir a lot.
Honestly they're some of the better bachelors in ANB, in my opinion, but I've noticed I tend to like the less popular bachelors for some reason so I don't know if I can account for good tastes ^^;;

I also love them a lot too, I married Sanjay. Back to your question though.
Amir: He holds himself with authority as prince who will become king should. He cares greatly for his kingdom and his people, as well as the people who make an impact in his life (OC). He looks in others a great deal of maturity as that is how he has been raised to be. However, the longer he stays in town, the more of his hidden side comes out is shown to the female OC. He shows a way more compassionate side of him than he has ever shown anyone else, but still carrying the princely authority and charm at the same time. And the combo really works. He shares his personal life with you, which is a great deal as he hasn't had many people to trust based on what I think was being said. But he is looking for a strong headed woman who can stand beside him through all that may come their way because of their relations and decision.
Sanjay: A soft-spoken and extremely well mannered man. It isn't a secret that he is a big fan of Prince Amir, as he is constantly talking about him outside heart events. He is used to tending to the Prince's every need since they were younger, and often tells you that the skills he possesses is because of his services to Amir over time. From the way he acts, he seems a tiny bit dense at first about how relationship work. I'll try not to spoil it for you, but there are times when he overlooks the OC hints of wanting to just be alone with him and focused on them. Even with all this, just a few corrected steps, and Sanjay turns into the most nurturing boyfriend/husband possible. His focus is on you and your needs. Wanting to be nothing but the best supporter for you.

I have great respect for Amir. I feel that he is observant and intelligent, and he also has compassion. I think the pretentiousness is more of Amir's immaturity. He's still learning a lot about the world, and at the same time, I'm sure he feels a lot of stress and pressure.
Being born into the role of a prince, a lot is most likely expected of him, and that molds his behavior and the way he holds himself. And with any person that comes from a privileged status, there can be a bit of spoiling that goes on, depending on who raised you, and what values they instilled in you, so I think Amir could be unaware if he is being pretentious: like showing up at your door to say he's leaving for Fall because he has duties and 'is a prince after all' to quote.
But despite those little things, Amir is a good-hearted man.
And I have felt ridiculous jealously at how much Sanjay brings up Amir (because Sanjay is the love of my universe, and the person I married).
Though, it's understandable since they grew up together, and Sanjay is like Amir's guardian, or a person who takes care of someone who's younger. For example, during the cooking festival, Sanjay mentioned how he'd scold Amir in the past for not eating his green peppers. And during the beekeeping festival, Sanjay said, to paraphrase, 'I don't intend to allow the prince to become involved in handling those vicious bees.'
Amir is not only an employer to Sanjay, they are also great friends.
When Sanjay is walking by the river, he mentions he and Amir used to play in rivers, which can show that while Sanjay is most likely older, he's still close enough to Amir's age to where they could have fun playing in the river together. I personally like to imagine that Sanjay is five years older than Amir.
Amir does seem to be going through a 'growing into adulthood' phase or a 'coming of age' in his ANB personality. I think I remember Amir saying things like, 'he still has a lot to learn'. So if he were, say, 19 at the start of ANB, Sanjay would be 24.
And, say, Sanjay met Amir when Amir was 7-years-old, Sanjay would be 12 at that time, which I think is young enough to still have fun playing in a river, but old enough to look out for someone who is younger. Again, that's just what I like to imagine as a sort of headcanon. And they're 'like family' (as Amir says when you marry Sanjay).
And as for Sanjay (who I know and understand on a much deeper level). To me, he is an angel in every sense of the word.
Sanjay is astoundingly selfless and humble (which are traits I greatly respect), compassionate, patient, calm, gentle and thoughtful. And, even though he's so humble, he's so gracefully dignified. He's intelligent and eager to learn. He's virtuous, talented, and just a genuinely pure-hearted soul.
There's a quote that makes me think of Sanjay, which says:
“Those who have suffered much become very bitter or very gentle.”
― Will Durant
Either though Sanjay is said to have been fortunate to be from a good orphanage:
I'm sure being an orphan has caused hardships for him at times. Sanjay himself even says, to paraphrase, 'I've been through greater hardships than this' when you cook a one or two star meal when married. Although I'm sure it was meant to be humorous to the player, it gives evidence that Sanjay has had his share of difficulties growing up, but still maintained optimism and faultless kindness in his personality.
Sanjay is the 'very gentle' outcome in the Will Durant quote above.
And as a bonus to Sanjay's wonderful personality and temperament, he is a absolutely gorgeous and handsome human being (and gorgeous on the inside too). Plus, I've always been fond of long hair on men, but that's more irrelevant, haha.
I feel both of Sanjay's names suit him perfectly.
Sanjay (English Version): (one meaning of a few) Protector
Celka (Japanese version): Heavenly, Divine
And, either though Sanjay hates gems (Amir too) because he's not a materialistic person, and I feel he generally dislikes material things. (Example: Sanjay (on moving) - 'For me, moving just involves carrying my immediate belongings with me. Fortunately, we can have Master Amir's luggage sent from our country.') I feel that Sanjay is a true gem. An ethereal, angelic gem.
I could go on for an eternity about Sanjay, but I'll just say: I'm a better human for knowing him. He is my light within the darkness, and my calm during the storm.
Also, it's okay to be in the minority! I also find myself there a lot of times, as well. Here's some great quotes, by the way, if you ever feel a little down about being in a minority:

Sanjay is a cutie patootie, he's my second favorite bachelor. I think the only reason they aren't more popular is because you unlock them so late in the game.
Both Sanjay and Amir are very complimentary of the MC's ability to run/build the town, they basically think you're the bee's knees. Amir talks about adapting your ideas to better suit his country's needs. Amir comes off as very contemplative to me, he cares for his country a lot and clearly wants to do as much as he possibly can for it.
Sanjay is very polite and friendly, and I think it is mentioned in a random event that he plays violin? Some form of fancy stringed instrument. I think Sanjay is sort of similar to Iroha in personality, they are both very supportive and kind, and they both are hard workers. I don't remember Amir's festival dialogue, but for Sanjay basically regardless of whether you win or lose he congratulates you on your hard work, he never really does that whole "How dare you not get first place in everything!!!" thing some of the other bachelors do.
Even though Sanjay is a butler, I think both characters have a kind of refined, princely air to them.
