growth of a crop/tree

I'll try to make my question as simple and understandable as possible..

Let's say I have a peach tree that is in its 1st day as a sprout 2 on the last day of fall season, I know they do grow dormant in winter but does the 30 days that passed in winter season also add to the days passed in the peach tree (as a sprout 2)?

I need to know this because whether you believe it or not, I have an excel spreadsheet file while playing lol

Probably too late to be useful, but no, as far as I know winter completely pauses tree growth, meaning the days as well as the weather would not be counted.
