Bee Information:
There are six types of bees. They unlock gradually over time, and the later three unlock in the third year and tend to be harder to find.
The time and location of the bees changes depending on what season you are in, but the Eastern Bee and the Koschevnikov's Bee will always be(e) on the Tall Crops/Flower/Honey/Mushroom screen, and the Mountain Honey Bee will always be(e) in the Forest Road area.
Here are some approximate locations and times, based on both the Japanese Wiki and my own experience.
Eastern Honey Bee:
* Spring: Top right of Honey Field, around 13:00-17:00.
* Summer: In the open area north of the Flower Field, around 13:00-17:00.
* Fall: Left side of Honey Field, around 10:00-15:00.
Koschevnikov's Bee:
* Spring: Bottom left of Mushroom Field, around 13:00-17:00.
* Summer: Top right of Tall Crops Field, around 10:00-15:00.
* Fall: In the open area north of the Flower Field, around 10:00-15:00.
Mountain Honey Bee:
* Spring: South of Witchie's House, around 12:00-17:00.
* Summer: Near the Panda (left foraging alcove, south part), not sure on the time.
* Fall: Near the Panda, not sure on the time.
The Japanese wiki lists "morning and evening" for those last two, I mostly see them around the 10:00 timeslot, maybe earlier.
Different bees give different types of honey, they all have a common and rare drop.

* Using the favorite perfumes will have a 1.5x quality boost for the specified bee.
* Using Autumn Twilight will give 1.2x the boost to all types.
* And Winter Glow will give between 0.5x ~ 2.0x the effect to all types.

Raising the Honey to 5* should take about 12 days if you are using the 5* Favorite Perfume or between 13 and 15 if using 5* Autumn Twilight.
Using Perfume that is not 5* is very inefficient. However, you should be making honey all the time. Just wait until a new year where you have a lot of good perfume to boost the star rank so you can get the most out of your perfume.
Bees will live from the first day of Spring to the last day of Autumn, you will need to restock the hives in the next Spring. It also resets the star rank.
You can put 3 Bees of the same type into each hive to get triple Honey from each harvest.
There is also a decoration combo of items you can put on your farm to add one honey to each harvest, but it does take up some room. It is 1x of each of the different flower basket decorations. There are 6: Red, Green, Yellow, Pink, Purple, and White Flower Baskets, but they can be kinda hard to get, because some are random Festival Prizes and Blue Shipping Request Rewards.
