Maybe I'm missing something but I can't find any thyme. I know I'm going to need it. I'm on spring 10 so very early in.

It appears in Westown (and maybe Lulukoko too) from Summer year 2 on. You can only find it in spring, summer and fall. That's what I found in some japanese webpage.

Edit: I think you can also get by in the treasure hunt you do with your pet, or if your pet has the correct gathering ability.

Thank you! I remember seeing that you would need it and was worried I'd miss out. In ANB I didn't gather enough of something that was season locked an was held up for a year lol

Soon you'll be doing the Thyme Warp, don't worry! It just takes a bit if Thyme to get there. I think Marvelous is just trying to spice things up.

according to another guide I read, your pet can also find thyme when you take it treasure hunting near the south-west mining node in Westown
