If its like the OG SoS then there is a handful of decorations like furniture and stuff for your farm (I remember using mine for a fountain and the phone booth). Otherwise mainly just to ship for some cash money, I suppose? But you probably knew all this already. I haven't seen any new uses for the coins specific to this game yet.
