How many different races of cow do I need?

I just got level B with West Town and unlocked Suffolk Cow and Zebu Cow, do they produce specific milk that I will need or is it just like Quaills that produce the same type of egg of chickens?

Quails produce different eggs than chickens, just as Silkie's also produce different eggs from either. Every animal produces different products...it's just that for recipes you can use ANY type of 'milk' or 'egg'. I don't know of any exceptions, though there might be some. But if you want to make a 'jersey cheese' in the maker, you will need jersey milk specifically.

Do you mean the Jersey Cow and Classic Cow? Suffolk is usually a sheep breed, not cow, and ASAIK, there aren't Zebu cows in Trio of Towns, but there should be a Jersey Cow (gives Jersey Milk) and a Classic Cow (looks sort of bobble-headed, gives normal milk), although maybe the names have been changed ...

Yes, that's what I meant.
Every quest and recipes that I've seen so far can be made with any kind of milk and egg, so that makes me think that the different kinds of products are merely aesthetic.
Aside from these minor differences, like the jersey cheese from jersey cows (which I called suffolk cow

)

I don't have the game opened, that's why I mistook the names.
I meant the big black cow with huge horns, I had Zebu from previous game in my mind but I think it's Buffalo or something like that.

Ohhh that's exactly what I wanted, thanks a million.
I guess it's not worth the trouble to raise one now.
I wish they had all different breeds unlocked from the beginning and just added more colors as you progressed, these buffalo cows are so cool, but they arrive too late.

What's really nice is that later-unlocked animals don't seem to give any bonus to winning the animal festival. You can as easily win with your plain ol' cow or chicken as with a quail or buffalo, from my understanding. (Though please correct me quickly if I'm wrong, lol.) So unless you really want to be able to make specific types of cheese, there's no need to have anything other than plain cows and chickens. But the quail is so cute and makes such a weird peeping noise, I had to have it. Plus I don't mind taking care of chickens at all since they're so easy. Cows and sheep are another matter, bleh.
Though I guess you need the different sheep for the fleece for materials and stuff. I haven't gotten the textile mill yet so I haven't looked into the different types of material yet.

Yea, I'm keeping one of each wool producing critter in order to make clothes in the future, but only got one cow and one quail (I ditched my chicken as soon as I saw that quail, it is so cute, then when I got to the coop I thought the game was glitched because I couldn't see it amid the hay, quails are camouflage ninjas, it's impossible to see them inside your coop when they are standing still

).
But buffalos are way too cool, I think I may purchase a timid one just to get that trophy of breeding one of each kind of animal, then feeding it's offspring with food to make it bigger until it doesn't fit in the barn anymore.

I will say it here for those who want to get all trophies, just in case. For the one you get by breeding each kind of animal, you only need to breed 5 animals: 1 chicken (normal, silckie, quail), 1 cow (normal, jersey or buffalo), 1 sheep (normal or shuffolk), 1 alpaca (any alpaca or llama) and 1 rabbit (any color).

That makes sense.
I got the trophy for owning one of each species with only 5 animals.
