I feel like I'm missing a critical instruction with the horse races in this game... is there an easy way to win? I have been giving my horse attention/affection everyday by brushing him, and he is obviously full grown too. The only issue is that his stamina decreases a little too quickly during the races.

That ties into my next question; is the "press A" minigame for horse racing like in (M)FOMT, where you mash A as fast as possible, or is it like a rhythm style method, where you need to find the right pace with your horse's limited stamina?

You need to let him rest a bit between bursts. Let him tire out completely and you'll lose a lot of speed.

As a side tip, you can "spend" all your money on coins and then back out with B. As long as you don't talk to the mayor's wife again before the race, the game will think you did buy the coins, even though you didn't.

So, free coins.

Train him up by riding him every day. You're probably not going to win the first one you enter, but if you ride him in circuits around your farm, his stamina builds up, and winning isn't so difficult.

He gets more stamina by getting him to like you.

He gets +2 stamina every day you brush him, +1 every day you call him, +1 every day you talk/ride, and -1 every day you ignore him (max 255). If the only thing you're doing is brushing him, he's unlikely to have much stamina before the 1st Fall Horse Race.
