Is it possible to make a good profit off of fishing in this game?
Also, are there any super rare fish that sell for a lot, like how in some of the previous games there would be a king fish or something?

I usually make profit with fish cultivation.... I have only a 3 star monk fish on 12 fish hatcheries... so I make roughly 72k a day with that...

There are many varieties of king fish, and while they are difficult to obtain at first they can fetch an amazing profit in fish hatcheries. In order to catch them you must catch all the fish in an area IN THAT AREA (catching the same fish in a different area will not count). A pink star Arowana sells for 9000, for example.

It is a lot of work, and there's no in-game way to keep track of it. I use this checklist as a guide, although I've managed to catch most of them without actually checking anything off. (Credit to whoever made this awesome sheet!)
