I miiight be wrong but in my experience it seems to level up after so many times collecting it. I believe that also increases the amount harvested per tree, so possibly both occur whenever you get the trophy for harvesting?

Both the star quality and amount harvested increase as you level up the rank. The most I've collected at once is 6 units per tree @ 5-star quality. idk if the amount will go up.

The same principle seems to be at work for any bamboo you may have planted, too (or at least the bamboo shoots harvested only in Spring.)

Depends on your play style I guess, since we can't really tell you how to play. I will say that it's nice to grow bamboo and maple syrup in mass quantities in the basement. And yeah, both only produce in spring and take 20 days to fully grow, so it's nice being able to harvest them year-round, whereas you're limited on the main farm for only 1/4 months a year. However, you can switch your farm's fields around, unlike your basement fields.

Only in spring, yes. By the time I had enough fields to care about producing and harvesting Maple I already had my basement. Having the sap produce every few days, all year round, is very profitable. I have about 20 Maple Trees so that would take up way too much room if doing it in my regular fields.
