Get ready to become addicted. And other than what was mentioned here, just explore early on I guess? There were some things I didn't find/notice early on because I didn't explore the entire map (the southern forest area, etc.). It's not massive or anything but it's pretty big and I think it'd be helpful to look all around early to know where to forage and such, as well as seeing events.
Also I'm biased and married Shane but yes you should befriend him, if only because his story arc is interesting.

Reading through the Bachelors, I admittedly can’t decide between three of them.......and two of them are friends lol

There aren't any missables as far as I know, so you can just relax and play the game however you want.

You can't go wrong with any of them, they're all real sweet.
(If you're interested in Sebastian I'd recommend befriending him as soon as possible. He spends a lot of time in his room and you can't get in there until you've reached two hearts with him.)

old mans berry basket quest. Someone on here a few posts back managed to miss the deadline to find it and he wouldn't accept it after a certain point and they weren't sure if they were SOL or had to wait to give it back next season.
Not really "missable" in the traditional sense but can be screwed up, i think.

Unless I've heard wrong, Sam's Three Heart event is also missable. It can only be triggered in year 1 and can't happen in winter. So, if you want to see all of his events, you have to get him to three hearts and activate the event before winter of your first year.
Clint's Six Heart event is apparently missable, as well. It won't trigger if you are married to Emily, or have seen her Eight Heart event or Ten Heart event.

Is Stardew more popular than HM/SOS or is it just getting more publicity nowadays? It's hard to tell. I see a lot of people praise it without realizing it's a HM clone (I'm not using the term negatively btw). I know it has a larger market, as HM is mainly Nintendo while Stardew has PS4, PC, and Xbox releases, but I thought at minimum Nintendo fans wouldn't make the same mistakes. Alas, I've seen a lot of Switch fans also seem clueless of HM. Harvest Moon is no super seller but I always assumed it had a familiar niche amongst Nintendo gamers.

It's a clone, yes, but it's also a good game.
Is it the second coming if the Harvest Goddess as some people hail it as? Eh probably not, it has bugs and issues. Some people even admit they need mods to enjoy it.
Does that make it not worth a HM fans time? Not really, it was basically made for us.
Why is it so popular? Probably YouTube let's players making a big fuzz out of it, the PC master race people getting a social farming rpg game to play, the lgbt community liking the inclusiveness, the mod community liking they can do what they want with the game, the fact it's relatively cheap, etc.
The fact that the actual Bokumono and Harvest Moon (yes, both) franchises have been in a bit of a decline probably helped it too.

It caters to a different crowd than Bokumono does. Indies have more freedom in terms of gameplay/features/player control (mods) and can afford to do a lot of things big name companies really can't do or are limited by due to the nature of business and legality stuff.
Stardew Valleys biggest appeal comes from its homage to the old classic Bokumono while bringing about new concepts and its own "stuff." Its cheap, is mod friendly which gives a lot of variability for players to mod what they want/do want and it brings back the old feel/vibe that a lot of players have missed and a lot of new players enjoy.
Truth is Bokumono has changed and continues to go in a different direction, and meanwhile Natsume does its own thing.
Its success is a combination of numerous factors: its a fun, addicting formula/game, allows mods, is cheap, and brings its own unique content to the table. Between that and word of mouth; voila. Success.

I don't really see how. They're both farming sims with dating elements. There's some differences between them but for the most part they're going for the same crowd. The major difference is that Stardew can easily have mods due to being on PC.

Bokumono has a much stronger social presence in its game, and has better presentation and is gameplay is different in that its much less customizable but more variety?
Might not be the best way to explain it. But Stardew Valley takes a much more simpler approach and even without mods puts more control in the players hands. Bokumono is more much more linear.
I say this as someone who's had more fun with Stardew Valley then i have with most modern Bokumonos. They share an overall same crowd, but when it comes to the finer details they aim/shoot for different things.

I also strongly agree that modern bokumono games do not cater to the same crowd as Stardew Valley. It's the same overall market, I think...but often not the same people within that market. But the key word for me there is definitely 'modern'. I think Stardew pleases most of the same people that count the very earliest bokumono games as their favourites.

I am one of those who is exclusively a fan of the most recent bokumono games and not at all a fan of any of the older ones. In that same vein, I have never really liked...or at least, never loved...Stardew Valley. (I do have a few things I like about it...I love the community centre part of the game with filling the bundles and fixing it up and so on...but it's definitely not a loved-level game for me overall. I had much rather play ANB, SoS1 or Trio than Stardew.)
While I would prefer a less googly-eyed and cartoonish character art style than we see in Trio, the otherwise prettier graphics of modern bokumonos are very important to me...I really can't do without it. (I think everyone here already knows that I absolutely cannot get into pixel art. If it is possible to like a game a maximum of 100%, then it featuring a pixel art style knocks my possible maximum down to about 50% in one blow.) I also like the complexity. Not just 80 crops but different soil types/fertilizers, makers, animal treats, etc...I LIKE that complexity. I get bored without it. I also need the sizable social portion of the game to make it sparkle for me. There's a lot I'd like to change or improve (just look at that 'dream bokumono game' thread I made a year and a half ago and see my wishlist of about a hundred items that have never actually existed in the game) but I really enjoy the most recent entries into the series. And I think almost all of what I'm really into is mostly only in the more modern Bokumonos. I'm also aware that exactly the parts I love most are what have made other people start to grow away from bokumono in favour of games like Stardew that are more true to the series as it was in the beginning.
So yeah. I don't feel that Stardew actually does cater to the same people as have only gotten into the bokumono series recently, except for people who can make do with a game simply being in the same overall genre, which is something I can't do. They're just not similar enough for me, anyway.
