So, I need to grow some out of season flowers to upgrade some tools. They would be out of season for both the current season I am in and the next season. I only have 8 days left in my current season and they require 12 days. When the season changes will they die (some or all) even if I am fertilizing them?

Yes plants in general won't survive a season change if they don't like the new season. So your Blue Roses will need to wait a bit before you plant them.
