Just adding that you could also milk the goat in A(n)WL and I’m pretty sure they’re in ToT as well. So that’s a few games with goats to milk. On the pet side of things, I agree with Kikki, give me a bird! A hawk, eagle, owl, parrot, or cockatoo, to be more specific. It'd be so cool! I don't know why there hasn't been a modern Bokumono game that allows you to have a bird as a pet yet. You'd think it'd be a no brainer
As for mythical animals, I feel like those would work best as special variations of normal pets that you'd get as a reward for fulfilling some odd-ball requirement.
For dogs, a hellhound would be freakin' awesome (another good idea from Robinstar.) For cats, well, I don't really know any good mythical cat creatures. Maybe a cute version of a sphinx could work? Or a bakeneko? For horses, a unicorn or a pegasus.
I'd like to see all the animals that would actually be on a farm irl/have served some sort of farming purpose that have appeared in the series thus far return.
I don't really like fantasy animals like unicorns and stuff. It'd be one thing to have some cute guardian spirit that's dependent on your farm's theme appear on your farm (Ex. A Japanese styled farm might have a cute fox spirit or tanuki you can interact with at like a shrine on your farm, etc.) but otherwise I say leave those kinds of fantasy animals to Rune Factory.

Only if it's one of those Siberian foxes and it isn't literally just a reskinned dog.
I would prefer to keep HM animals to realistic choices. No unicorns, no eagles, etc. Animals that people would keep on farms. I'd like to see more non-typical farming animals. Don't some countries in Asia herd bison, or something, for their wool and milk? I'd like to see more types of animals than the generic common type. I know some countries have these skinny looking cattle with huge horns and no spots, for example. Also let me have a draft horse!

Real Farm Critter: Hmm... To think of something that hasn't been used is difficult... What about different breeds of horses? Like Shetland ponies? Or making a Donkey adorable? I really liked riding the Ostrich in Tree of Tranquility. They were so goofy but cute! Unfortunately, they were ruined by Animal Parade's random animal calling system. I wanted the Horse, not my Sheep, Animal Parade! XD
Mythical Farm Critter: Someone's already beaten me to mentioning Griffins. Since they could serve as BOTH transportation by air as well as land. They could herd animals with ease, I'd imagine!
Real Pets: Pretty/Colorful Birbs! But ones you can have the option to teach tricks. Like the option with the whistle/flute for dogs in many of the games.
Mythical Pet: The first one's gonna sound weird, but... Chupacabras or a legendary Phoenix. The Chupacabra could herd animals in at night if you forget to bring them in. Although, since they're rumored to eat goats, a Chupacabra might not be the best idea. xD

Ducks are my favorite animal they've included in the series, I wish they weren't so rare. We have quails, why can't we have ducks?
As for mythical animals, I wouldn't be into them as normally obtainable animals, but as a gift from the Harvest Deities or even a companion, like Finn. Having a kirin from the Harvest Goddess as a partner and to help you get around would be pretty cool.
On the other hand, if they were producing animals, like a phoenix that produces eggs and lives in your chicken coop, I think that would make them all the less special, even if you can only get one of them. I'd want something with personality.
