You would have to check with the store in question and ask what their relevant policies are, but most places will hold pre-ordered games for a few days after the official release date. A full week seems to be the common in the stores where I live. (To be clear, I haven't bought a game at Target in a very long time, so I have no clue what their pre-order policies are.)

You're never able to customize your character in Rune Factory. You're not playing an avatar character that you make yourself, but an actual pre-existing character. Like Frey in RF4. I actually like that, in Rune Factory...I like that I am playing a specific person's story, not making up my own. (It's weird to me that they even let you change her name, but then...I guess in Zelda games, they even let you change Link's name!) I want to make up my own in Bokumono since there's no real story there other than a light framework of community goals, so the story is whatever you build for yourself, rather than the pre-determined story of RF, so I like playing an actual character in RF. It sucks that you were disappointed by it, though!

The player character can be customized in RF5 to a limited extent. Players can choose between a male and female protagonist at the beginning of the game. The option tois also still around, as well as various outfits for the player character to change into. Otherwise, the player character cannot be changed, like in other RF games.
(For comparison, the early HM games had no customization whatsoever. Players were given one character, such as Jack, to control at the beginning of the game and no ability to alter that character's appearance. The player character can be customized in RF5, but not as much as in SoS:PoOT or the recent Animal Crossing games.)
It does seem that most "casual" games have a widely customizable player character nowadays. Seemingly every HM/SoS-like game has a bunch of customization options. Even Pokemon added a bunch of customization options back in Pokemon X and Y. Mario Odyssey and LoZ:Breath of the Wild also gave their protagonists a bunch of outfits to wear as well. I wouldn't be surprized if RF6 adds more customization options to the series, such as the ability to dye the player character's hair color or something like in HM:OW (where doing so doesn't affect the character's genetics).

Those kinds of customization, though, are very surface-level. If you take off Link's Hylian gear and replace it with the climbing gear, he's still Link...just wearing different clothes. In RF it feels the same to me. I'm not playing a representative of myself...I'm playing Frey. I can change the colour of her outfit or put a different accessory on her head, but she's still Frey, the character the devs made, not a character *I* made. In my case, I have no complaint about that...I like playing a set character in Rune Factory. But I imagine that if you want RF to have the type of customization and character-creation options of a Bokumono game, then what's available in RF must be disappointing. Well, I wouldn't even play RF5 if it didn't let me choose a gender but still left marriage choices (girls only) in the game. I tried playing past RFs where you couldn't choose a female MC...and I couldn't deal with it and quit, every time.
I wonder, though. I liked Frey, quite a lot. I have no idea if I'll like Alice. Maybe if I don't like her much, I'll wish I could scrap her and create my own character from scratch.

I was only able to watch a little bit of the Twitch preview, and it didn't look too bad for what I saw, but I actually really dislike the voice acting and exclamation snippets. I could pick the Japanese voices I guess, but I would like the option to turn off the voices. It's one thing to have voice acting in games with animated cutscenes, but when it's set up like the Rune Factory/HM/SoS with all the readable dialogue, I don't like it. I thought it was weird in Rune Factory 2 (and awful acting), and the vocalizations in Olive Town we're strange to me too. It may also be that I prefer British English actors to American English ones, not sure why.

Also, I don't know whether anyone posted this yet, but X-Seed translated the love quiz that Marvelous originally released in Japanese. It's called the "Perfect Matchmaker." The link to it is http://www.runefactory-5.com/matchmaker/ .
I got Murakumo, with Dylas being considered his RF4 equivalent. I didn't care for Dylas at all (though I do like his part-monster thing he and Leon had going on), so I don't think this is the quiz for me. I like Murakumo's beast-like design, but I don't care for what I know of his personality. It helps that I generally avoid using the bath (I never used up my 5 free uses in RF4 despite being in Year 3), and Murakumo's description on the RF5 official website makes him sound a like a push-over to me, though I think that the website wants wants him to come across as overly generous instead.
