How many do we give him, to get the reverse confession and reverse propose? And also could we get Mitten Crab Soup from the message board?

All candidates are the same. You have to give 100 gifts to get a reverse dating proposal. In order to get a reverse marriage proposal, you must give another 50 gifts. In that total of 150 gifts, 30 of them must be their favourite. Fritz' Mitten Crab Soup can only be gotten by winning the recipe from the festival.
You must have purchased the Basic Soups recipe set from Silk County first, or you won't get to win that set. You'll have to win Recipe Set 3 from the Harvest, Fishing or Cooking festival. After you win that you'll have a chance to win Recipe Set 4, which is where Mitten Crab Soup is.
Fritz is the most tedious bachelor to woo because of Mitten Crab Soup. Mitten crab is also horrible to catch. It can only be caught in a blizzard or typhoon in Riverside Pasture, and even then, only after catching every single other fish that can be caught at that location. You'll need the sacred rod, too, of course, which requires you to have a sheep that has spent 100 hours at the safari. Stupid Fritz. I could never consider him an option because of that rigamarole. Good luck to you; I hope RNG is in your favour.
