One "upgrade" per barn and coop. It's not actually an upgrade, you get to keep the small barn and instead buy a large one as separate.
Up to 10 big or small buildings can be set up at a time per type.
They allow 10 animals each, and enable breeding. The size is only 2 squares bigger than the last if I recall, but gets pretty spacious on inside.

Farm house gets 3 upgrades I believe? Small house, bigger house, really big house.
First upgrade is pretty small, just a little house. Second adds a 2nd floor, 3rd adds a large room.

You get them from talking to sprites/ collecting items from them every day! I think it's 1 per helper sprite, but I am not 100% sure of that.

As far as I know ( or well, noticed ) that's the only way, yeah. I usually drop by at the end of my day to grab the items, check sprite shop and then go to sleep.
Aside of materials, the seed/ crop/ treasure items rotate daily too. So the same stuff won't always be on sale, hence why checking daily is pretty important if you wanna catch specific stuff.

I was talking about Earth Sprite Points for the shrine. Looks like all I have to do is play my game normally and more earth Sprites will appear. Therefore I’ll get more points.

Has anyone actually confirmed if there is a way to get a larger fridge space? I've upgraded the house to the maximum and it just gives me 1 extra page of space for a total of 4 limited pages. I recall someone responding, saying there's a way to get an even larger fridge after the final house upgrade. I don't see it anywhere unless I'm missing something. It's already the next day after I upgraded the house so everything should refresh at Nigel's Handiworks.

I found the quickest way to get them popping sprites is to leave a large chunk of land run by overgrown. After which I would clean it up and get about 10-30 sprites after each clean up. It's still pretty random and they don't pop out that much but the more you have to do, the more likely they pop out. Since farm work is limited to what you put out, overgrown comes when it wants and you just have to clean it out.

I thought I remembered seeing a large fridge upgrade in Nigel's furniture but when I went to double check last night since I needed a fridge upgrade myself it didn't actually exist so I'm assuming that my brain just decided to mentally implant the fridge upgrades from older games into Nigel's shop in some form of anguished wish fulfillment of the storage problem while I was skimming the first time.

It's okay. I hope there's a fridge installment in the future nonetheless. There's plenty of space in the house for it. Since I'm not one to decorate the house, my Gorgeous House is very empty. They should at least let us put the storage bins inside the house if not a bigger fridge separate from the house.

How can I get coffee and will the sprite store sell it at some (random) point? I’ve read that the coffee tree is sold in spring, but I don’t think I ever bought it because I haven’t unlocked coffee in the general store. Now I am looking for another way to obtain it because I am not in spring.

The Boss Sprite does sell Coffee (bean) in summer, probably the other seasons as well. Of course, you would have to throw that in a seed maker for a sprout. I'm sure the Coffee Sprout is also occasionally sold by the Boss Sprite, even out of season.
