You might need to figure out some of it yourself, taking the list of dishes in the guide to help. Quality of dish and ingredients does matter for the judge, otherwise it would be impossible to serve up plain Spaghetti to help one's village win.

The black cloud is 0 points. You might notice that it only happens if it's a failed dish.
... means just a few points, low quality dish. You might notice that some villagers rarely get any better than this, especially the two children, but also those who mention in conversation that they aren't good at cooking. Pretty much what you get with a store-bought dish.
:lala: is a fair amount of points, maybe up to around 30, a higher-quality dish, but one :lala: and two ... would be unlikely to win against two :lala: and one ...
 is anything above for 4.5-5 star dishes. With the right dishes involved, one  and two :lala:, can win against two  and one :lala:

Once you become good friends with the triplets, you'll notice that they'll either serve up failed dishes, or something that's really good, such as Tiramisu for the dessert round. For that reason, I tend to refer to them as jokers, because it's difficult to tell which it will be. Worth remembering is that the friendship improvements also affects the opposing team.

DS - still courting in spring year 3 this round, wooing the Witch Princess.
