To my knowledge there are three possible cow colors, and the type make no difference in what milk they produce.
Ordinary white and black
Marble would be the white/black/pink
Brown
I haven't seen any star cow like there were in AWL:SE (brown with white forehead).

I too built my farm based on Aurora's layout. I skipped the Gold Lumber shed and put the Mushroom Shed in its place. Might build the remaining shed once I want to fill the last spot in the building list. Also moved the pond to be below the left-most Poultry Barn instead of having it where I might want to move animals.
