While I've got the European version of HMDS, this part isn't all that different.
My ways of earning money during winter came from animal produce and mining, with a small side income from fishing. I got my first animals in time to participate in the Chicken festival, and the Cow festival, using money from digging for trinkets in the front room of the mine to afford the barns (using the save/reload trick). I filled up the barns and buying more as I could afford to unlock the sprites. So, when winter came it became my main earner, especially after getting the Canner maker. But really, any shipped item can be canned to get 50% more income from it, so just about all my shipping goes through the Canner.
I also started early on driving my MC to fainting in the evenings by air milking to raise the level of the milker so I'd get more milk from each cow. Getting a Kappa hat as soon as possible made it easier, and after getting the cursed Kappa hat blessed, the limit was my own patience. Some 800 uses per level means it takes a lot of persistance. Since sheep can only be sheared every 8 days, leveling the shears was lower on my list of priorities.
In my first winter I was still working on killing 50 animals for the Witch Princess, otherwise I'd have been working on building relationships with the villagers. And of course, I did a lot of indoor fishing from the pub.
