The heart levels for animals raise very slowly. Just keep doing what you're doing. It takes a very long time to raise the chicken and dog's heart levels, because the only thing that will raise their affection is picking them up. Talking to the horse and brushing it, as you are doing, will raise the horse's affection level, so expect the horse's heart level to go up faster than the dog and chicken's. Make sure to do this every single day (unless there's a typhoon or something, and you can't get out of your house). Also, as Lucky Black Cat said, keeping the animals outside as much as possible (in good weather) will raise their affection levels faster than if they were stuck inside.
Make sure that you do not hit the animals with tools, as it sharply lowers their affection levels. Also, don't forget to feed the chicken every day, and don't leave it out in bad weather...
It took me almost a year to get my horse to 10 hearts, and much longer for my chickens and dog...

no, not really. they are all female. which is odd. how are more chickens made? hmm~
The hen goes "flat", signaling the rooster that she is ready, then the rooster mounts her and starts pretending the hen is a stair-master, giving the hen his seed (somehow).
Hens lay eggs with or without a rooster, but if you want chicks to be hatched, the eggs need to be fertilized.

Lil, you have a huge imagination. I would have never thought of that. o_O
Don't chickens need to eat a lot of food in order to lay eggs. (In real life)
In AWL, you had to buy a rooster and a hen in order to get fertilized eggs...I wonder why they didn't do that in MFoMT....
