"UMA" is the Japanese word for horse. It's not an acronym.
If his hat were in Kanji, this is what it would look like:

USHI = Cow, hence the name "Ushi no Tane", which translates to "Cow Seed" or at least something a long those lines.
UMA = Horse
The reason for this is because in HM64, he took care of animals, most importantly, horses.

For the last time, USI is NOT cow. UNLESS there's a "H" added between the "S" and "I", it's not cow. >>
