Taro
The old man use to be a farmer back in the days of his youth, but now he's busy keeping an eye on his grandkids, Elliot and Natalie. Taro picks up your shipping every day and sends it off the island.
It is never really stated, but Taro looks very close to a younger farmer from past Harvest Moon games. That might be why he is so willing to give you advice, and he can even tell you the next day's weather just by keeping an eye on the environment.
